Job title: Sous Chef.

Reports to: Head Chef.

Location: Mohale Lodge.

Type of contract: Fixed-Term.

Qualifications and Experience:

• Culinary Diploma plus three (3) years’ experience as a Sous Chef.

• Pastry knowledge is required.

Essential Duties and Responsibilities:

• Direct food preparation and collaborate with the Head chef.

• Help in the design of food and drink menu.

• Produce high quality plates, including both design and taste.

• Oversee and supervise kitchen staff.

• Assist with menu planning, inventory, and management of supplies.

• Ensure that food is top quality and that kitchen is in good condition.

• Keep stations clean and comply with food safety standards.

• Offer suggestions and creative ideas that can improve upon the kitchen’s performance.

• Monitor and maintain kitchen equipment.

To maintain all food cost and stocks in line
