MMELESI LODGE IS LOOKING FOR A HEAD CHEF!!!
Mmelesi Lodge, Thaba-Bosiu has an exciting position open for an experienced Head Chef.
PURPOSE OF THE JOB:
The incumbent will be responsible for staffing the kitchen, developing menu offerings, forecasting supply needs and costing meals. Liaising with the Food & Beverage Officer to make sure the kitchen meets all regulations, including health and safety guidelines.
You will be reporting to the General Manager.
KEY DUTIES AND RESPONSIBILITIES:
· To ensure that the kitchen is consistently producing quality food.
· To determine how food should be presented, and create decorative food displays.
· To determine production schedules and staff requirements necessary to ensure timely delivery of services.
· To estimate amounts and costs of required supplies, such as food and ingredients.
· To inspect supplies, equipment, and work areas to ensure conformance to established standards.
· To take part in the creation of recipes and the preparation of advanced items, while assigning less complicated tasks to the sous chef and cooks.
· Instruct and supervise cooks and other workers in the preparation, cooking, garnishing, and presentation of food.
· To ensure wastage is minimized by careful supervision of food preparation methods.
· To ensure proper hygiene storage methods are utilized to prevent food loss.
· To ensure kitchen staff are aware and follow healthy and safe work practices at all times.
· To ensure workstations are kept clean and hygienic at all times.
· To maintain stock levels of all kitchen supplies.
· To ensure meals are prepared on time and sufficient quantities are available.
· To be available for functions as they arise to ensure that food is prepared and served as required.
· To train kitchen staff, including cooks and other kitchen workers.
· To analyze recipes to assign prices to menu items, based on food, labor, and overhead costs.
· To cost menus.
· To arrange for equipment purchases and repairs.
· To meet with customers to discuss menus for special occasions such as weddings, parties, and banquets.
· To meet with sales representatives in order to negotiate prices and order supplies.
· To prepare and cook foods of all types, either regularly or for special guests or functions.
· Collaborate with other personnel to plan and develop recipes and menus, taking into account such factors as seasonal availability of ingredients and the likely number of customers.
· To check the quality of raw and cooked food products to ensure that standards are met.
· To check the quantity and quality of received products.
· To demonstrate new cooking techniques and equipment to kitchen staff.
· Record production and operational data on specified forms.
· To pay careful attention to the operating budgets of the department to ensure that costs are controlled to maintain the correct levels of spending.
· To perform all other job-related duties.
REQUIRED EDUCATION, EXPERIENCE AND PERSONAL ATTRIBUTES:
· Bachelor’s degree/ diploma in Culinary Arts
· Must have at least 5 years of culinary experience
· Strong leadership skills
· Ability to delegate tasks effectively
· Excellent organizational skills
· Attention to detail
· Ability to work under pressure
· Ability to resolve conflict in a constructive manner
· Ability to solve problems and think-on-the-feet
· Experience and success in equivalent job roles
· Computer literate (MS Excel, MS Word, POS, etc.)
· Extensive food and wine knowledge and creativity
· Ability to plan and cook menus (both A la carte and Functions)
· Must be active, agile and physically fit
· Knowledge of purchasing, ordering, receiving, food costing and inventory procedures
