𝐉𝐨𝐛 𝐏𝐮𝐫𝐩𝐨𝐬𝐞:
To monitor, control, and optimise the cost, quality, and efficiency of the food and beverage operations at MidNight Sun. The F&B Manager ensures accurate inventory, cost controls, and financial reporting, supporting management in decision-making and profitability strategies.
𝐊𝐞𝐲 𝐑𝐞𝐬𝐩𝐨𝐧𝐬𝐢𝐛𝐢𝐥𝐢𝐭𝐢𝐞𝐬:
Cost Control & Analysis:
• Monitor and control F&B costs across all departments (kitchen, bar, events, etc.).
• Conduct daily, weekly, and monthly cost analysis and report on variances.
• Develop and maintain recipes and costing cards in coordination with chefs and Barternder.
Inventory Management:
• Conduct regular stock counts for food, beverages, and consumables.
• Reconcile physical stock with system records and investigate discrepancies.
• Ensure proper storage, rotation, and usage of stock to minimise waste.
Procurement & Receiving:
• Verify and authorise food and beverage purchase requisitions.
• Monitor supplier performance, pricing, and delivery schedules.
• Work closely with the procurement team to ensure best value for MidNight Sun.
System & Data Management:
• Maintain an updated database of products, pricing, suppliers, and costings.
• Use POS and inventory systems to generate accurate reports and forecasts.
• Collaborate with Finance to optimise F&B software and data accuracy.
Compliance & Procedures:
• Ensure all F&B operations adhere to internal controls, health and safety, and audit standards.
• Develop and enforce procedures for portion control, pricing strategies, and loss prevention.
Reporting:
• Prepare and submit cost reports, consumption summaries, and profitability analyses.
• Provide management with timely insights on performance, margins, and opportunities.
𝐊𝐞𝐲 𝐒𝐤𝐢𝐥𝐥𝐬 & 𝐂𝐨𝐦𝐩𝐞𝐭𝐞𝐧𝐜𝐢𝐞𝐬:
• Strong numerical and analytical skills
• High attention to detail and accuracy
• Solid knowledge of F&B operations and cost control
• Proficiency in POS systems, inventory software, and Microsoft Excel
• Ability to work independently and meet deadlines
• Strong communication and interpersonal skills
𝐐𝐮𝐚𝐥𝐢𝐟𝐢𝐜𝐚𝐭𝐢𝐨𝐧𝐬 & 𝐄𝐱𝐩𝐞𝐫𝐢𝐞𝐧𝐜𝐞:
• Diploma or Degree in Hospitality Management, Accounting or related field
• Minimum 2–3 years of experience in a similar role within hospitality or F&B operations
• Experience with inventory management systems and reporting tools
• Knowledge of local food and beverage markets and suppliers (an added advantage)
