Mmelesi Lodge Thaba-Bosiu
Position: Food & Beverage Officer.
To work with all food & beverage staff and ensure proper completion of all F&B duties. Direct and coordinate the activities of the kitchen, restaurant, and bar areas. Prepare daily, weekly, and monthly reports for the F&B department. The incumbent will report directly to the Head Chef.
Key Duties and Responsibilities:
· To work with Head Chef to design delicious and attractive menus and continuously make improvements.
· To plan, forecast, source, and order food supplies for the kitchen, as well as beverages to stock the bar.
· To build positive relationships with food and beverage vendors.
· To work according to the food and beverage budget.
· To manage daily food and beverage operations.
· To maintain a high quality of service in the food & beverage outlets.
· To ensure food and safety regulations are adhered to in all food & beverage outlets.
· To maintain positive customer relationships, process complaints, and respond to customer needs.
· To assist with marketing events including weddings, parties, etc
· To create and enforce food & beverage policies, targets, and KPIs.
· To train food and beverage service staff.
· To prepare daily, weekly, and monthly food & beverage reports for the food and beverage department and General Manager.
· To monitor staff performance and provide feedback to the Head Chef and GM.
· To monitor revenues and expenses.
· Draw and manage weekly and monthly food and beverage staff duty roster
· To perform all other job-related duties as assigned by management.
Required Education and Experience
· Diploma/ degree in Culinary Arts or any other related field.
· Must be able to read, speak, write, and understand the English and Sotho languages.
· Minimum of 3 years in the food & beverage field
· Experience handling cash, accounting procedures, and general administrative tasks.
· In-depth knowledge of the food industry.
· Exceptional organizational, leadership, and communication skills.
· Ability to forecast food and beverage needs
· Excellent customer service skills
· Working knowledge of various computer software programs (MS Office, POS)
· Ability to spot and solve problems efficiently
· Knowledge of food & beverage trends
· Guest-oriented and service minded
· Ability to work under pressure
· Inventory management
