JOB SUMMARY

The Lerotholi Polytechnic wishes to appoint an innovative and creative person with exceptional operational cook skills and knowledge about culinary arts trends for the position of Cook.

JOB DESCRIPTION

Under the general supervision of Resident Chef – Hospitality Management, the incumbent is responsible for planning and preparing delicious meals according to the menu, must be able to follow instructions in cooking and deliver well prepared meals. The incumbent should also be able to instruct and demonstrate to students the correct method of preparation, garnish and serving of food.

MAIN DUTIES

  1. KITCHEN PRODUCTION
  2. To prepare food according to daily menu’s and according to customer orders.
  3. Preparation of desserts if and when necessary. 
  4. Preparation of cake. Muffins and scones on daily basis for counter sales.
  5. Preparation of baked products when necessary.
  6. Garnishing and presenting of food according to procedures.
  7. Portion control during platting.
  8. General assistance and supervising in the kitchen
  9. Provide training to students in the kitchen.
    1. Assisting:
  10. Planning of menus for restaurant and functions for two weeks in advance
  • STOCK CONTROL
  • Ordering of stock according to daily manu’s.
  •  Receiving of all stock ordered.
  • Control of issued ingredients.
  •  Stock taking in kitchen stores fridges and deep freeze.
  • Stock taking of cutlery, crockery, glassware and all kitchen equipment.
  • Repairs of equipment and utensils in the restaurant.
  • STUDENT TRAINING
  • To instruct and demonstrate students the correct method of preparation, garnish and serving of food in the restaurant.
  • To organise students in a productive and efficient manner.
  • To assist students with student promotions.
  • To assess students.
  • To control student activities and check the quality and quantity of food prepared.
  • FUNCTIONS
  • To prepare food and dessert for special functions.
  • To prepare finger lunches and sandwiches according to bookings.
  • To serve and attend to customers in the restaurant.
  • To create a good impression regarding food and services.
  • To dish up food for functions.
  • To ensure that food reaches guests on time.
  • To assist in the set up of venues according to function requirements.
  • HYGIEN AND SAFETY
  • To attend to hygiene in the kitchen.
  • To attend to all safety rules and regulations in the kitchen
  • To ensure hygiene and clean standards according to establishment rules at all times.
  • To supervise of the cleaners in the kitchen.

MINIMUM QUALIFICATIONS AND REQUIREMENTS

  • Diploma in Hospitality OR Mass Catering.
  • One (1) year work experience in Hotel or Mass Catering companies.
